White Tuna

Albacore is the only species allowed to be labeled as “white” in the U.S. Albacore became known as “the chicken of the sea” because its milder taste compares to chicken meat. This species is excellent for recipes that call for a moderate flavor. 

Light Tuna

These species are all known as ‘light.’ With a slightly more penetrating flavor than Albacore, these varieties are commonly used in tuna salads, pasta dishes, and casseroles.

  • Skipjack is the most common species of canned and pouched light tuna. Skipjack generally has the strongest flavor and higher oil content. 
  • Tonggol is white to light pink in color, with a tender texture and light flavor. Chicken of the Sea offers Tonggol in a pouch. 
  • Yellowfin (also known as Ahi) is pale in color, with a firmer texture and milder flavor than Skipjack. Yellowfin comes in a can or pouch

Solid and Chunk Varieties

As the name implies, solid tuna is made from larger pieces of tuna loin and is an excellent option for recipes that call for a larger cut. Chunk tuna contains smaller pieces that vary in size, and is great for casseroles, salads, and other dishes that require smaller pieces.
