Lemon Orzo Crab Salad

With lemony orzo, feta cheese, fresh herbs, and plenty of crab, this salad makes an ideal side dish for any summer meal.

Salad Ingredients

  • 1 (8 oz) cup Chicken of the Sea┬« Backfin Crab
  • 2 cup cooked orzo
  • 1/2 cup feta cheese
  • 1/4 cup chopped fresh basil
  • 2 Tablespoons chopped flat-leaf parsley
  • 1 roasted red pepper from jar, sliced
  • 1/4 cup sliced almonds
  • 3 cups chopped spinach
  • Zest of 1 lemon

Lemon Vinaigrette Ingredients

  • 1/3 cup olive oil
  • 1/4 cup apple cider vinegar
  • 3 Tablespoons fresh lemon juice
  • 1 Tablespoon honey
  • 2 cloves fresh garlic
  • 2 teaspoons lemon pepper
  • 1/2 teaspoon salt

Instructions

  1. Whisk together all the lemon vinaigrette ingredients (olive oil, apple cider vinegar, lemon juice, honey, garlic, salt, and pepper). Set aside.
  2. In a large bowl combine all the salad ingredients except the crab (orzo, feta cheese, basil, parsley, roasted red pepper, sliced almonds, spinach, and lemon zest).
  3. Top the salad with the crab.
  4. When ready to serve, pour the lemon vinaigrette over the salad. Gently toss together.
  5. Season with additional salt and pepper if desired.
