Residents of Pines Village Retirement Communities, Inc., a Continuing Care Retirement Community in Valparaiso, IN, recently demonstrated 85 -97% percent acceptance rates for a new collection of healthcare foodservice recipes developed by the Chicken of the Sea culinary team.
Residents tasted and rated a variety of new recipes for appearance, aroma, taste, texture, and excitement factors. Top-rated recipes were:
- Classic Tuna Deviled Eggs, a tuna twist to a traditional comfort food, featuring 12 grams of protein per serving, and very adaptable to a mechanical soft diet. One resident described the dish as “just like I used to eat when I was growing up”.
- Asian-Inspired Salmon Lettuce Cups, built with Chicken of the Sea wild-caught pink salmon, garlic, ginger, sesame seeds, and duck sauce, and described by residents as “different” and “very good”.
- Salmon Quiche, featuring Chicken of the Sea skinless, boneless pink salmon along with diced peppers, cheddar cheese, and eggs. Remarked one taste-tester, “Salmon is a good substitute for bacon.”
- Smoked Salmon Wrap, designed as a versatile finger food and retail foodservice menu offering, with 22 grams of protein at just 340 calories per sandwich.
- Salmon Bisque, a low-fat, heartwarming soup made with 2% milk rather than cream and described by one of the residents as having a “good texture and taste”.
- Southwest Salmon Corn Cakes, a colorful creation using corn, ginger, and smoked paprika with Chicken of the Sea wild-caught pink salmon. Residents commented the recipe was “something new” and “pleasing”.
Healthy seafood recipes for healthcare

The Chicken of the Sea recipe collection has been designed to meet a variety of healthcare foodservice applications, including room service, buffet dining, catering, and retail cafes. Recipes are coded for potential application to dysphagia diets and other dietary requirements of healthcare clients.
Resident versus non-resident ratings
Friends and family who attended the event also rated the seafood fare. Choosing the same six recipes at the top, they ranked them differently, with Salmon Quiche being number one. Classic Tuna Deviled Eggs, while less familiar to younger guests, nevertheless ranked as number three in popularity.

“Through resident remarks following the Seafood Celebration, the Salmon Bisque and Salmon Quiche have been added to the September dining menu,” stated Joel Fabugais, Food Service Manager at Pines Village. “Our dining team was really excited about the Salmon Lettuce Cups and is working on an Asian Inspired menu for an upcoming Birthday Night.”
Themed event
“Pines Village hosts family and friends dining events throughout the year, but the Chicken of the Sea Seafood themed luncheon was so much fun for everyone! Ranking the recipes and the small plate service created more conversation, laughter, and engagement from all. Themed dining events are a great way for our residents to invite their friends and family to their ‘home’ for a great meal and lively conversation,” said Michele Murphy Wise, Pines Village’s Vice President Program Development.
