Mediterranean Sardine Salad

Packed with flavor and healthy fat, this dish is perfect for your lunch menu.




  1. Combine beans, cucumber, tomatoes, red onion and chopped scallions.
  2. Mix in Italian or balsamic dressing of choice to taste.
  3. Place approximately 2/3 cup salad mixture on top of lettuce leaf.
  4. Flake 2-3 sardine fillets on top of each salad followed by 1 tsp. chopped parsley.
