Ingredients
- 1 (43 oz) packet Chicken of the Sea® Wild Caught Light Yellowfin Tuna
- 1 gal cooked rice
- ½ c olive oil
- ½ c minced garlic
- 14 onions, chopped
- 8 carrots, chopped
- 4 bell peppers, chopped
- 1 qt canned corn
- 1 qt peas
- 2 tsp paprika
- 1 Tbsp salt
- 2 tsp fresh cracked black pepper
- 1 qt fresh chopped cilantro
Instructions
- Heat griddle to medium high heat. Add oil, garlic, and onions, cook until soft and fragrant.
- Add carrots, bell pepper, corn, and peas. Cook for about 5 minutes or until tender.
- Add the cooked rice and stir until combined. Season with paprika, salt, and pepper.
- Gently fold tuna into the rice mixture and cook until tuna is warm. Garnish with cilantro.
