Ingredients
- 1 (43 oz) packet Chicken of the Sea Albacore Tuna in Water
- 9 (1/2 lb) frozen puff pastry sheets, thawed
- 9 large eggs, beaten
- ½ c water
- 9 large tomatoes, sliced thin
- 2 lb goat cheese
- 3 lb asparagus, halved
- olive oil for brushing
- 2 ¼ tsp salt
- 2 ¼ tsp pepper
- lemon zest
Instructions
- Pre-heat oven to 425°F. Line baking sheets with parchment paper.
- Cut puff pastry sheets into 4-inch squares and place on prepared baking sheet pans.
- Whisk together the egg and water. Lightly brush the top side of the puff pastry squares with egg wash.
- Lay slice of tomato, some goat cheese, 2 pieces of cut asparagus, and tuna chunks on top of each pastry square.
- Brush all the toppings with olive oil and season with salt and pepper.
- Bake at 425°F for about 15-20 minutes or until pastry dough rises and toppings are warm.
- Top with fresh lemon zest and serve warm or at room temperature.
