Ingredients
- 1 (43 oz) pouch Chicken of the Sea® Albacore White Tuna in Water
- ¼ c olive oil
- 2 small onions, chopped
- 4 zucchini, grated
- ½ c lemon juice
- 9 eggs
- 2 cups seasoned breadcrumbs (or crushed pork rinds for low-carb/ gluten-free), plus extra for coating
- salt, to taste
- black pepper, to taste
- ¼ c olive oil, for frying
Instructions
- Heat ¼ cup olive oil on medium-high heat and add onions and zucchini. Cook until they are softened. Place in a bowl and allow to cool.
- In bowl with the cooled onions/zucchini, add tuna, lemon juice, eggs, bread crumbs, and salt and pepper and combine.
- Make tuna mixture into 34 (3-inch) patties and coat with bread crumbs.
- Add the ¼ cup of olive oil to griddle and warm over medium heat. Fry the tuna patties until they are a golden brown and warmed all the way through.
