Mediterranean Caprese Crab Salad

This simple salad combines the summery flavors of a classic Caprese with the sweetness of crab.

Salad Ingredients

  • 1 (8 oz) cup Chicken of the Sea® Jumbo Lump Crab
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, chopped
  • 1/3 cup kalamata olives
  • 1/4 cup sliced red onion
  • 1 cup chopped fresh mozzarella
  • 3 Tablespoons chopped fresh basil
  • 4 cups arugula

Balsamic Dressing Ingredients

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 Tablespoon fresh lemon juice
  • 2 cloves fresh garlic
  • 1/2 teaspoon salt
  • black pepper, to taste

Instructions

  1. Whisk together all the balsamic dressing ingredients (olive oil, balsamic vinegar, lemon juice, garlic, salt, and pepper). Set aside.
  2. In a large bowl combine all the salad ingredients except the crab (cucumber, cherry tomatoes, olive, red onion, mozzarella, basil, and arugula).
  3. Top the salad with the crab. Break up the big chunks of crab to your preferred size.
  4. When ready to serve, pour the balsamic dressing over the salad. Gently toss together.
  5. Season with additional salt and pepper if desired.
