Ingredients
- 1 (40 oz) packet Chicken of the Sea® Wild Caught Alaska Pink Salmon
- 1/3 lemon pepper seasoning
- 4 small red bell peppers, thinly sliced
- 2 c shredded carrot
- 2 c finely chopped celery
- 2 c reduced fat mayonnaise
- grated zest of 16 small lemons
- 1 c fresh lemon juice
- 1 Tbsp salt
- 1 Tbsp black pepper
- 32 slices whole grain bread
- 32 small romaine lettuce leaves, trimmed
Instructions
- In a large bowl, mix together the salmon, bell pepper, carrot, celery, mayonnaise, lemon zest, and lemon juice. Season with salt and pepper.
- Place a lettuce leaf on one slice of bread and top with 6 oz of the salmon mixture.
- Place the remaining lettuce leaf on top and add the second bread slice on top to form a sandwich.
- Cut the sandwiches in half and serve.
