Ingredients
- 1 (66.5 oz) can Chicken of the Sea® Chunk Light Tuna in Water
- 4 Tbsp lemon zest
- 2 ½ Tbsp minced garlic
- 26 1/2 lb zucchini, spiralized
- 3 qt cherry tomatoes
- 3 pints shredded carrots
- 1 ¼ qt pesto
- 3 ½ Tbsp salt
- 3 ½ T pepper
- 3 ¼ c olive oil
Instructions
For Raw:
- In large bowl combine zucchini noodles, cherry tomatoes, shredded carrots, lemon zest, minced garlic, and pesto. Stir until everything is well combined. Fold the tuna into the salad.
For Cooked:
- Heat pan on medium-high heat. Add oil, then add zucchini noodles, minced garlic, lemon zest, carrots, and tomatoes. Cook for 1-2 minutes or until your preferred doneness. Remove from heat. Add pesto, and fold in the tuna. Season with additional salt and pepper, to personal taste.
