Ingredients
- ¼ c olive oil
- 2 large onion, diced
- 1 ½ Tbsp minced garlic
- 1 (66.5 oz) can Chicken of the Sea Solid White Albacore Tuna in Water, drained
- ½ c mayonnaise
- 2 ¼ c seasoned panko breadcrumbs
- 1 c + 2 Tbsp grated Parmesan cheese
- ½ fresh parsley, chopped
- ¼ c dried oregano
- ¼ c lemon juice
- 9 eggs
- 1 1/8 tsp salt
- 1 1/8 tsp pepper
- Tzatziki
- Lemon Slices
- Toasted Naan, optional
Instructions
- Heat the oil in grill over medium heat. Sauté the onion until softened, about 3 minutes. Then add garlic and continue to sauté until fragrant, about 1 more minute. Set aside to cool.
- Preheat oven to 400 degrees.
- Add tuna to a large mixing bowl with the mayonnaise, breadcrumbs, parmesan, parsley, oregano, reserved sautéed onions, lemon juice, and eggs. Mix until well combined.
- Form the mixture into approximately 66 meatballs and place them on lined baking sheets.
- Bake for 20 - 25 minutes, or until golden.
- Serve immediately over a swirl of tzatziki, with fresh lemon slices and an optional slice of toasted naan.
