15-minute Mediterranean Tuna Grain Bowl

This healthy Mediterranean inspired foodservice recipe features light tuna, whole grains, vegetables and fresh herbs.

Ingredients

  • 1 (43 oz) packet Chicken of the Sea® Wild Caught Light Tuna in Water
  • 1 gal cooked whole grains (brown rice, farro, quinoa or couscous)
  • 1 qt shredded purple cabbage
  • 1 qt chopped cucumber
  • 3 pints cherry tomatoes, halved
  • 1 qt baby carrots, sliced
  • 2 c crumbled feta cheese or mozzarella cubes
  • 1 c chopped fresh basil
  • 3 ¼ c Italian dressing
  • ½ Tbsp salt
  • 1 ½ Tbsp pepper

Instructions

  1. In each bowl, add 1 c grains then top with 2 ½ oz tuna in the middle of the grains.
  2. Arrange cabbage, cucumber, tomatoes, and carrots around the tuna.
  3. Top with feta cheese then drizzle with Italian dressing.
  4. Season with salt and pepper to taste.
